Bill Collison is the founder of Bill’s, the British cafe chain which operates casual dining outlets nationwide. The story began in 2001 when Bill opened a small greengrocers shop in Lewes, East Sussex, called Bill’s Produce Store. Following a flood, Bill added a café to his shop, and after great success he went on to open a second restaurant in Brighton.
Since then, the Bill’s brand has expanded and now comprises 81 sites across the UK. Its restaurants are packed full of vibrant colour and vintage trinkets, and its seasonal menu caters for every occasion and taste. Ranging from daily dinner specials to British classics and fresh plant-based alternatives, Bill’s offers something for everyone.
