Nick Vadis was made Culinary Director of Compass Group UK & Ireland in 2012, after taking the role as its UK Executive Chef in 2007.
He moved to Compass in 2001 as Executive Chef at British Airways, where he played a pivotal role in the development of pre-flight dining, resulting in the model being implemented in several US cities and creating the so-called ‘Sleeper Service’.
Nick started his career with the Royal Navy; training in culinary arts at both the Royal Naval Supply School and the Army School of Catering. After spending many years working at home and abroad, he gained a degree in Education, and later became Head of Cookery Training for the New Royal Naval Cookery School, where he introduced NVQs into all Culinary Craft Training.
Nick left the Navy in 1999, and entered into a joint venture with Cambridge University; setting up a purpose-built Executive Training centre and conference facility.
Nick has won various awards for his contribution to the catering industry, innovation and staff development; including accolades from the Craft Guild of Chefs, MIDAS and the Foodservice Cateys. Nick is also part of the UK Bocuse academy, a technical advisor to the English National Culinary Team, and Vice-President of the Craft Guild of Chefs.
